Sandwiches and Wraps

Here’s a selection of sandwich ideas to brighten up anyone’s packed lunch box and make your work colleagues envious

FRUIT ‘N’ NUT SANDWICH
Serves 1

Spread American peanut butter generously on two slices of wholemeal bread. Cover one slice with sliced fruit of your choice (apples, orange, banana or a mixture) and top with the other.

TOMATO & CHICKEN CRUNCH SANDWICH
Serves 2

Carefully spread 4 slices white bread with 4 tbsp (60ml) crunchy American peanut butter. Arrange 2 wiped, sliced firm ripe tomatoes, 5cm (2 in) length of sliced cucumber, 25g (1 oz) wiped, sliced button mushrooms, 2 trimmed and chopped spring onions and 100g (4oz) cooked sliced skinless and boneless chicken on 2 slices of the peanut buttered bread. Sprinkle over a little freshly ground black pepper, mustard and cress. Top with the remaining bread slices, garnish with mustard and cress.

PEANUT AVOCADO SPECIAL SANDWICH
Serves 2

Carefully spread 4 slices wholemeal bread with 3 tbsp (45ml) smooth American peanut butter. Toss slices from 1 small firm ripe peeled and halved avocado in 1 tbsp (15ml) lemon juice to help prevent discolouration. Shake off excess and toss together with 2 shredded lettuce leaves and 2 grilled and chopped rindless bacon rashers. Divide filling evenly between 2 slices of the peanut buttered bread, sprinkle with a little freshly ground black pepper and top with the remaining bread slices.

NUTTY WATERCRESS SPECIAL SANDWICH
Serves 2

Carefully and thinly spread 4 slices of brown bread with 2tbsp (30ml) Marmite. Mix 4tbsp (60ml) smooth American peanut butter and 1tbsp (15ml) freshly squeezed orange juice together until smooth. Spread the bread evenly with the peanut butter mixture. Top 2 slices of the peanut buttered bread with15g (½ oz) trimmed and rinsed watercress, then top the sandwiches with the remaining bread slices.
